- 4 beautiful pork chops of approximately 200 g (7 oz) each
- 700 g (25 oz) cooked sauerkraut
- 80 g (2.8 oz) blanched lardons
- 1 peeled onion thinly sliced into rings
- 1 slightly acidic apple (granny smith)
- 30 cl (1.25 cups) blonde beer
- butter and oil or a knob of lard
- salt and freshly ground pepper
