- 1 pork tenderloin* well trimmed
- 500 g of healthy mushrooms trimmed and wiped
- 3 peeled shallots
- 30 cl of veal stock prepared (if possible)
- 20 cl of liquid cream (30%)
- butter and oil (or duck fat)
- thyme flowers and one peeled garlic clove
- salt and ground pepper
