  • 12 very fresh quail eggs
  • 0.8 cup (20 cl) of excellent tomato coulis (homemade for example)
  • 20 beautiful pitted green olives
  • 1 preserved red bell pepper
  • Espelette pepper
  • 1 tablespoon of good turmeric
  • ripe olive oil
  • a little lemon thyme flowers
  • salt and freshly ground pepper
