Ingredients
- 150 g dark chocolate
- 25 g butter
- 4 eggs
- 1 egg white
- 15 g sugar
- 4 pinches of cinnamon
- 1 pinch of salt
- 1 pinch of espelette pepper
Break the chocolate into pieces and melt it in a double boiler or microwave on medium power
Smooth the melted chocolate and flavor with cinnamon
Add the egg yolks one by one to the lukewarm chocolate while whisking vigorously
Whip the 5 egg whites until stiff peaks form with a pinch of salt
Pour the sugar in a stream a few minutes before the end while whisking
Add the whipped egg whites in thirds by lifting the mixture with a spatula
Then distribute the mousse into cups or glasses
Keep refrigerated
Serve well chilled with chocolate shavings, a pinch of cinnamon on top and why not a cinnamon stick
