Recipe: Passion Chocolate Mousse
Ingredients for 4 servings
- 3.5 oz (100 g) of dark chocolate from 55%
- 0.8 cup (20cl) of liquid cream
- 3 egg whites
- 0.7 oz (20 g) of sugar
- 8 passion fruits
- 4 physalis
Step-by-step directions
1 melt the chocolate in a water bath and add the liquid cream (lukewarm). mix well and remove it from the water bath
2/ whip the egg whites until stiff peaks form, then add the sugar and continue whisking to make them very firm.
3/ fold in the chocolate while mixing gently.
4/ cut the passion fruits in half and with a small spoon collect the juice and seeds. divide them into 4 glasses. cover with chocolate mousse and decorate with a physalis.
5/ place in the refrigerator for at least 1 hour.
it's very simple, quick and delicious, if you like the sweet and tangy contrast.
