1 Peel the eggs.
2 Cut them in half and remove the yolks.
3 Make a vinaigrette with sour cream, vinegar or lemon juice, shallot, salt, pepper, and parsley.
4 Mash the yolks and mix them into the vinaigrette.
5 Place a shrimp or a bit of tuna in the egg white halves and fill with vinaigrette.
6 Arrange salad greens on a plate and place the eggs and cherry tomatoes on top.
Nice recipe for eggs « mimosa ». The principle is well explained here. Traditionally, you sift the yolks over the eggs (not into the vinaigrette) at the very last moment, which is why they're called Mimosa, after the flower's yellow color.
