  2. Pan-seared beef skirt steak with grey shallots for 4 people:
  3. 4 beef skirt steaks of approximately 6.25 oz (180 g) each
  4. 5.25 oz (150 g) grey shallots (if possible) peeled and sliced
  5. 0.8 cup (20 cl) dry white wine
  6. 0.3 cup (6 cl) alcohol vinegar
  7. 0.8 cup (20 cl) prepared veal stock

knob of butter and oil

  1. salt and freshly ground pepper

Purée as at "Lucas":

  1. 4 large floury potatoes
  2. 5.25 oz (150 g) fresh butter
  3. 1.25 cups (30 cl) milk
  4. salt and grated nutmeg
