Ingredients for 4 servings
- 500 g (17.75 oz) of macaroni (or spaghetti)
- 500 g (17.75 oz) of diced zucchini, eggplant, red and green peppers and cherry tomatoes
- 1 dl of olive oil
- black pepper, white pepper, freshly ground salt and Herbes de Provence
- bring salted water to a boil
- plunge the pasta and cook according to the indicated time
- put your olive oil in a pan or sauté pan if you have one
- sauté the vegetables in the oil for 3 minutes, salt then add the cherry tomatoes cut into quarters
- drain the pasta thoroughly
- add the pasta to the vegetables and mix everything together
- pepper generously with both peppers, taste then add the Herbes de Provence
- serve very hot
