  2. 7 oz (200 g) duck cracklings*
  3. 3 small sucrines* or one beautiful lettuce
  4. 0.6 cup (15 cl) of 30% liquid cream
  5. 4 thin slices of fresh ginger cut into tiny small squares
  6. 1 tablespoon of olive oil
  7. salt and freshly ground pepper
