This allows the grapes to ripen to perfection, giving Cahors wines their unique and complex character. The vineyards are planted on clay-limestone soils, which also add their own signature to the wine.
Cahors wine is often paired with gastronomic meals, particularly with red meats and strong cheeses. It is also an excellent accompaniment to dishes based on truffles and mushrooms. It is generally not recommended to drink it young, as it needs at least a few years in the cellar to develop all its nuances.
