Roasted duck with apples is classic Loire Valley cooking. Fill the bird with apple quarters, roast slowly at 130°C for 3 to 4 hours. The meat becomes tender, the apples dissolve into a natural sauce. That's all you need.

Ingredients for 6 servings
servings
1 beautiful cleaned duck
A few peeled apples, cut into large quarters
salt and ground pepper
Step-by-step directions
1 Put the duck in a roasting pan and fill it completely with large apple quarters.
2 Salt and pepper.
3 Cook in a gentle oven at 265°F (130°C) for 3 to 4 hours, turning regularly.
The duck will come out of the oven confit, tender, it's a marvel of simplicity and flavors !!!
Chef Patrick's Comment
I also like to garnish it with apple quarters and brush the skin with liquid honey seasoned, then the cooking will be at 150°C for two hours, basting often. For small ducklings, cooking time 50 minutes.
