Duck gizzards are not only consumed in salads, as proof this recipe is enhanced with button mushrooms and a light sauce based on poultry broth and cumin. After 2 hours of gentle simmering, the gizzards become meltingly tender. The cumin adds subtle warmth that makes the difference. Plan about 2h30 total, and you don't need to hover over the pot.

Ingredients for 4 servings

17.75 oz (500 g) of fresh duck gizzards
1 onion
3 tablespoons of olive oil
14 oz (400 g) of button mushrooms "preferably fresh"
salt, pepper
1/2.1 qt (2 liter) of poultry broth
1 tablespoon of cumin
2 tablespoons of cornstarch (diluted in cold water)
Step-by-step directions
1 Brown the mushrooms, onion and gizzards in hot oil for a few minutes. 2/ Lower the heat and add the poultry broth, the 2 tablespoons of cornstarch diluted in cold water, salt, pepper and cumin. 3/ Cover and simmer over low heat for 2 hours. Stir from time to time. The texture of the gizzards should be very tender and the sauce reduced. Enjoy!!!!

Difficult recipe to access
First of all it is preferable to roast the gizzards and only then add the garnish and sweat it so that it expresses its own flavor.

Can I replace the cumin with another spice?
Sure. Try caraway or a pinch of dried thyme instead. Avoid sweet spices like cinnamon. Cumin stays the most balanced choice for this sauce.
How do I know when the gizzards are truly tender?
Test with a fork: they should give way with no resistance, almost crumble. If you feel resistance, simmer another 20 minutes. The sauce should coat lightly, not be watery.
How long keeps this dish in the fridge?
3 days maximum in an airtight container. Freezes well for 2 months. Reheat gently for 15 minutes with a splash of water to avoid drying out. Tastes even better the next day.
