Recipe: Duck Boudin Slices and Candied Pears
Step-by-step directions
1 In a pan melt 1 tablespoon of duck fat, then add the pear slices, salt and pepper and let them stew for 15 minutes covered, then add your tablespoon of honey, turn off the heat and cover.
2 In another pan pour the 2 tablespoons of duck fat, when it is very hot place your slices and sear them quickly (2 minutes) on both sides, turn off the heat and cover, rest for 7 to 8 minutes.
At the moment of tasting, turn the heat back on for 2 minutes under your pans then arrange on your plates harmoniously on very hot plates and on each slice place a small walnut kernel.
