Ingredients

For 6 friands:

  • 400 g (14 oz) puff pastry
  • 1 egg yolk for glazing

For the filling:

  • 250 g (8.75 oz) sausage meat
  • 100 g (3.5 oz) veal, finely chopped
  • 1 whole egg
  • 50 g (1.75 oz) shallots, chopped
  • 3 cl (1 fl oz) port wine
  • 1 cl (0.3 fl oz) cognac
  • 3 sprigs flat parsley
  • 1 sprig tarragon
  • Salt and pepper to taste
