In a bowl, mix the egg, port, cognac, chopped herbs, and shallots. Add the meat and mix well. Season with salt and pepper, and taste for seasoning.
Roll out your puff pastry and cut 12 rectangles. Make a friand by placing filling on one rectangle, leaving 1 cm around the edges. Brush the edges with water using a brush, then place a second rectangle of pastry on top and seal by pressing on the edges.
Repeat the process for all 6 friands.
With a knife, score the top of your friands. Mix one tablespoon of water with your egg yolk (egg wash) and brush this mixture on top using a brush.
Let rest 2 hours in the refrigerator.
In a preheated oven at 375°F (190°C) (gas mark 6), cook your friands for about 30 minutes. The pastry should be perfectly cooked.
Serve warm with a green salad.
