For 6 friands:

  • 14 oz (400 g) puff pastry
  • 1 egg yolk for glazing

For the filling:

  • 8.75 oz (250 g) sausage meat
  • 3.5 oz (100 g) veal, finely chopped
  • 1 whole egg
  • 1.75 oz (50 g) shallots, chopped
  • 1 fl oz (3 cl) port wine
  • 0.3 fl oz (1 cl) cognac
  • 3 sprigs flat parsley
  • 1 sprig tarragon
  • Salt and pepper to taste
