Chinon is a red wine produced in the Val de Loire region of France. It is made from Cabernet Franc grapes, also known locally as Breton. Chinon wine is renowned for its complex flavour profile, with aromas of red fruits, liquorice, and pepper. It is equally distinguished by its tannic structure, which provides excellent length on the palate. The Chinon vineyard is situated on the slopes of the Loire river, between the towns of Tours and Saumur. The vines are cultivated on clay-limestone soils that impart the wine's distinctive character. Chinon wine benefits from ideal climatic conditions, with warm summers and mild winters. Several styles of Chinon exist, varying according to winemaking methods employed. Red Chinon is the most common expression, though white and rosé versions are also produced. Red Chinon is typically aged in oak barrels, which contribute aromas of vanilla and cedar. White and rosé Chinons are generally aged in stainless steel vats, imparting fresher, more fruit-forward aromatics. Chinon is closely associated with the Touraine region, where it is produced. It is highly regarded for its distinctive character and exceptional quality. Red Chinon pairs well with red meat dishes such as beef or lamb, and also complements robust cheeses including Roquefort and Gorgonzola.
