Ingredients for 4 servings
- 1 rabbit, approximately 3 lb (1.35 kg)
- 8.75 oz (250 g) of button mushrooms (optional)
- 1 bouquet of fresh herbs: bay leaf, sage, marjoram, thyme (from the garden if possible)
- 3 tomatoes, peeled and seeded
- 1 yellow onion and 1 red onion
- 2 cloves of garlic
- 4.4 oz (125 g) of Greek black olives
- 4 anchovy fillets
- 1 Espelette pepper
- 1 glass of dry white wine
- 1 glass of walnut wine
- Salt and pepper
