- Rabbit loin with preserved lemons for 4 people:
- 2 beautiful farm rabbit loins cut into 8 pieces
- 4 small preserved lemons cut into 16 quarters with pulp removed
- 1.75 oz (50 g) pitted green olives
- 12 small peeled spring onions
- 1.5 cups (35 cl) cider or farm apple juice
- a few lemongrass verbena leaves
- 1 tablespoon ras el hanout
- olive oil
