  1. Rabbit casserole with preserved lemons for 4 to 6 people:
  2. 1 rabbit (if you can find one) thighs cut in half, saddle in 4 pieces and front legs in 2.
  3. 2 shallots peeled and cut into mirepoix
  4. 1 beautiful carrot peeled and cut the same way
  5. 2 cloves garlic peeled, degermed and cut in half
  6. a small bunch of lemon thyme and 1 bay leaf
  7. 3 small preserved lemons cut into thick slices (seeds removed)
  8. 100 g (3.5 oz) green olives pitted
  9. 40 cl (1.7 cups) artisanal apple juice (if possible)
  10. 3 tablespoons cornstarch
  11. 20 cl (0.8 cup) liquid cream (30%)
  12. 1 box of 400 g (14 oz) straw mushrooms or 500 g (17.75 oz) fresh young ones picked still closed
  13. salt and freshly ground pepper
  14. ripe olive oil
