Ingredients for 6 servings

- Rabbit casserole with preserved lemons for 4 to 6 people:
- 1 rabbit (if you can find one) thighs cut in half, saddle in 4 pieces and front legs in 2.
- 2 shallots peeled and cut into mirepoix
- 1 beautiful carrot peeled and cut the same way
- 2 cloves garlic peeled, degermed and cut in half
- a small bunch of lemon thyme and 1 bay leaf
- 3 small preserved lemons cut into thick slices (seeds removed)
- 3.5 oz (100 g) green olives pitted
- 1.7 cups (40 cl) artisanal apple juice (if possible)
- 3 tablespoons cornstarch
- 0.8 cup (20 cl) liquid cream (30%)
- 1 box of 14 oz (400 g) straw mushrooms or 17.75 oz (500 g) fresh young ones picked still closed
- salt and freshly ground pepper
- ripe olive oil
