  • thyme and 2 bay leaves
  • 100 g (3.5 oz) small bacon lardons blanched and sautéed
  • 20 cl (0.8 cup) dry white wine
  • 2 tablespoons good tomato concentrate
  • sunflower oil or goose fat
  • salt and freshly ground pepper
