  • 14 oz (400 g) small button mushrooms cleaned and cut into 4
  • 2 shallots minced
  • 1 clove garlic crushed and chopped
  • thyme and 2 bay leaves
  • 3.5 oz (100 g) small bacon lardons blanched and sautéed
  • 0.8 cup (20 cl) dry white wine
  • 2 tablespoons good tomato concentrate
  • sunflower oil or goose fat
  • salt and freshly ground pepper
