Ingredients for 6 servings

  • Roasted chicken with dark chocolate Proportions for 4 to 6 people (depending on appetite):
  • 1 beautiful farm chicken of approximately 4 lb (1.8 kg)
  • 2 large yellow onions, thinly sliced
  • 3 cloves of garlic (degemmed, crushed and chopped)
  • 10.5 oz (300 g) of ripe tomatoes (seeded, peeled and chopped into large pieces) or organic in jars
  • 3.5 oz (100 g) of high quality blonde raisins
  • 0.9 oz (25 g) of almond powder
  • 4.25 oz (120 g) of bitter cocoa powder (van hooten)
  • 1.1 qt (1 liter) of prepared beef broth.
  • Regarding the spices, in a mortar crush with the bottom of a saucepan 1 star anise and 10 coriander seeds then add 1/2 teaspoon of cinnamon and set aside.
