Skate tails are white, tender fish cooked in foaming butter. Here, they finish in a 100°C oven with steamed new potatoes and fresh lemon. Plan 30 minutes total.

  • 8 beautiful skate tails* skin removed (21 oz (600 g))
  • 10.5 oz (300 g) new potatoes from Ré or Noirmoutier (tiny)
  • 3.5 oz (100 g) salted butter of good quality
  • a little olive oil
  • a few grams of cornstarch
  • 2 garlic cloves, germ removed and thinly sliced
  • 1 untreated lemon, peeled and cut into small squares
  • sea salt (if possible)
  • lemon thyme and bay leaf
  • fine salt and freshly ground pepper
