Pollack is a small white fish with delicate flesh, affordable and from a sustainable resource. Pan-fried Meunière style with button mushrooms and fresh diced ginger, it takes just 3 minutes to cook and a bit of technique: turn off the heat after flipping so the flesh doesn't fall apart.
Ingredients for 4 servings
- 8 pollack fillets* of about 2.5 oz (70 g) each
- 8 beautiful button mushroom caps
- 0.7 oz (20 g) fresh ginger, peeled and cut into tiny dice
- a pinch of flour
- a few sprigs of flat parsley, chopped
- olive oil
- butter
- fine salt and freshly ground pepper
- a few drops of lemon juice
