1 sachet of vanilla sugar or one vanilla pod scraped
1 whole egg
1.75 oz (50 g) of type 55 flour or cornflour
1 untreated lemon or a small combava
1 teaspoon of cinnamon
peanut or grape seed oil
caster sugar
Step-by-step directions
1 Cook the rice in the milk with two tablespoons of sugar, the vanilla sugar and a pinch of salt (approximately 22 minutes) being very careful that it doesn't stick. 2/ When it is cooked and has absorbed all the milk, remove from heat, spread on a baking sheet and let it cool. 3/ Then mix in the flour, egg, cinnamon, grated lemon zest or combava. and form small balls then flatten them. 4/ Heat your oil then dip your little pancakes in it. Then place them on absorbent paper and let them cool a little. And before serving, roll them in caster sugar.
