  • 4 Beautiful farm-raised veal chops approximately 180 g each
  • 4 medium new potatoes from Île de Ré (if possible)
  • 180 g of small brown button mushrooms, peeled and quartered
  • 1 shallot, minced
  • 20 cl of liquid cream 30%
  • 10 cl of veal stock
  • 50 g of butter and a hint of olive oil
  • 1 heaping tablespoon of Madagascar Turmeric (if possible)
  • a few seaweeds
  • fine sea salt, freshly ground pepper
