the assembly:
1- in the middle of the plate, put a little pastry cream, then place a meringue disc (this way it won't slide on the plate).
2- put a nice quenelle of ice cream or sorbet (not too frozen)
3- replace the 2nd disc and coat it with the remaining pastry cream
4- arrange your fruits harmoniously alternating the colours
then put your coulis around and using a knife point make "commas" with the most beautiful effect.
