Ingredients for 6 servings
- 1 pumpkin weighing approximately 1 kg
- 1 leek
- 4 medium potatoes
- 2 onions
- 3 cloves of garlic
- 2 carrots
- salt, pepper and nutmeg
- 2 slices of semi-white bread
1- Cut the pumpkin into quarters, peel and remove the seeds. Cut the quarters into small cubes.
2- Mince the onions and garlic cloves.
3- Cut the leek in half lengthwise. Wash the leek and cut it into slices 5 to 8mm wide.
4- Cut the carrots into small cubes.
5- Peel and cut the potatoes the same way.
6- In a saucepan, sweat the onions in butter. Add the pumpkin, leek, potatoes, garlic, and carrots quarters, let them sweat covered for five minutes, then cover with water. Bring to a boil and simmer (approximately 45 minutes) until the vegetables are tender.
7- Blend with a mixer. Season to taste.
Toast small cubes of bread. Serve the soup and garnish with croutons.
Tips: you can also garnish it with grated gruyere and parsley.
