- 1 beautiful chicken (farmyard if you can find Black Berry which I love) weighing 1.4 to 1.6 kg prepared and trussed (the neck, wing tips and cleaned open gizzard kept)
- 1 large onion studded with 3 cloves
- 1 large carrot cut into dice
- 1 small leek sliced
- 1 celery branch
- White roux for 2 liters of cooking:
- 150 g good butter
- 150 g sifted flour
- 30 cl liquid cream 30%
- 60 g fresh butter
- a few drops of lemon juice
- 200 g long rice (Camargue)
- 1 medium onion finely chopped
- 100 g butter (60g+40 g)
- 1 small bouquet garni
- fine salt
- half an untreated lemon
