Ingredients for 4 servings

  • 1 beautiful chicken (farmyard if you can find Black Berry which I love) weighing 1.4 to 1.6 kg prepared and trussed (the neck, wing tips and cleaned open gizzard kept)
Garnish for cooking:
  • 1 large onion studded with 3 cloves
  • 1 large carrot cut into dice
  • 1 small leek sliced
  • 1 celery branch
thyme and bay leaf
  • White roux for 2 liters of cooking:
  • 150 g good butter
  • 150 g sifted flour
For finishing:
  • 30 cl liquid cream 30%
  • 60 g fresh butter
  • a few drops of lemon juice
Pilaf Rice Preparation:
  • 200 g long rice (Camargue)
  • 1 medium onion finely chopped
  • 100 g butter (60g+40 g)
  • 1 small bouquet garni
Seasonings:coarse salt freshly ground pepper
  • fine salt
  • half an untreated lemon
