Ingredients for 4 servings
- 4 chicken thighs,
- 1 strong chorizo,
- 300 g. of rice,
- 2 red peppers,
- 3 tomatoes,
- 1 onion,
- 1 can of tomato paste,
- 1 can 4/4 of fine peas,
- 25 cl of dry white wine,
- 2 tbsp. of olive oil,
- salt, pepper
1- In a sauté pan heat the olive oil. Brown the chicken thighs in it. Set aside.
2- In the sauté pan, sweat the sliced onions until they are translucent.
3- Wash, seed the tomatoes and peppers.
4- Add to the sauté pan: peppers in strips, tomatoes diced, tomato paste, white wine, chorizo cut into rounds, chicken thighs.
5- Cook at a simmer, approximately 30 minutes. Set the thighs aside in a warm oven.
6- Put the rice in the sauce, mix, add a little water if necessary. When the rice is cooked, add the drained peas. Mix.
Serve with one thigh per person.
