1- Pour 5 liters of water into a large pot and add a handful of coarse salt. When boiling, add your beans and cook for 7 minutes after the water returns to a boil.
2- Meanwhile, in a frying pan, add a generous knob of butter with a little oil. When hot, add your chanterelles, salt and pepper, and let them cook for 5 to 6 minutes, then remove from heat and cover.
3- Drain your beans and plunge them into ice water, then place in a colander.
4- In a salad bowl, pour the vinegar and oil, salt and pepper, stir, then add your beans and mix well.
5- Add your fresh herbs on top of your chanterelles, then arrange them slightly pressed into your bean salad and arrange your small "cherry" tomatoes around it.
