Ingredients for 4 servings
- 400 g cleaned sea beans
- 400 g freshly cooked whelks
- 5 cl olive oil
- 4 cl cider vinegar
- 1 small apple cut into cubes
- 1 pinch of horseradish or wasabi
- a few strips of preserved red and yellow peppers.
1- Remove the opercula from the whelks then shell them by removing the intestine (the spiral) * then cut them in half lengthwise pour a little olive oil and fresh thyme flowers over them (lemon if you have it).
2- Bring water to a boil plunge your sea beans into it then as soon as it returns to a boil drain them, cool them and place them in a salad bowl.
Final preparation
Heat a pan add a little olive oil, then your whelk slices and their marinade just heat through then add your sea beans your apple cubes, your cider vinegar and your horseradish or wasabi
in total this operation should only last 1 to 2 minutes.
Then arrange elegantly on your 4 plates place your pepper strips and serve immediately.
*Some people are fans of this intestinal flesh called "spiral"
As you have probably noticed there is no salt in the composition of this recipe the sea salt contained in the seaweed is sufficient for its seasoning.
