Ingredients for 2 servings
- 4 grated zucchini
- 1 grated onion
- 2 grated tomatoes (or tomato sauce)
- 1 tbsp tomato paste
- oil
- salt, pepper
- 1/2 cup water, 1 pinch of sugar
1- In a pan, sauté the onion in 4 tablespoons of oil, let it cook until it becomes transparent.
2- Add the zucchini stirring with a wooden spoon and let cook for 10 minutes.
3- Add the tomato and tomato paste diluted in 1/2 cup of water with 1 pinch of sugar (to remove acidity), salt, pepper and let cook then reduce heat and let simmer until fully cooked. (15min)
4- Add a hot pepper for those who like it.
5- Serve plain or add 2 eggs as an omelet and stir.
