  • 3 large cassava tubers
  • 1/2 teaspoon of dried organic shrimp
  • 2 cloves of garlic, degemmed and chopped
  • 1 shallot, sliced
  • 200 g (7 oz) of organic shrimp tails, cooked and peeled
  • 4 eggs
  • a bouquet of chervil, flat parsley and a little chopped coriander
  • salt and a little Espelette pepper powder
  • 50 cl (2.1 cups) of grape seed oil (if possible)
