1 tomato, peeled, seeded and cut into small squares
4 black olives, pitted and cut into small squares
0.3 cup (6 cl) olive oil
salt and Cayenne pepper or Espelette pepper
8.75 oz (250 g) shell pasta
Step-by-step directions
1 Boil 2.1 qt (2 liters) of salted water and when boiling, add your shell pasta, lower the heat slightly, cook for 11 minutes.
2 In a large pan pour your olive oil and when it is hot, sauté your prawns 2 minutes on each side. Remove them leaving the juice in the pan.
3 Put your pan back on the heat and sauté your zucchini cubes for 2 minutes, salt and pepper with Cayenne or Espelette then add your tomato cubes and black olive cubes, and chopped garlic, sauté just once and set aside.
4 Shell your prawn tails quickly while keeping 4 heads for presentation then put them in your pan with the vegetables.
5 Put your pan back on the heat, drain your shell pasta and pour it into your pan to mix with all the ingredients, correct the seasoning.
6 In a small tall ring on very hot plates, arrange your gourmet pasta and decorate with a prawn head. A very simple and quick dish to prepare.
