servings
12 beautiful white Landaise asparagus
scraped
1 organic pink grapefruit with zests removed and cut into julienne and juice extracted
organic olive oil
chives
fine salt white pepper from the mill or combava powder
coarse sea salt
Step-by-step directions
1 Bring 6 liters (6.25 qt) of water to boil and salt with coarse salt.
2 Make a bundle with the asparagus then cook them with a cloth placed on top.
3 Place the zests in a tea ball and immerse it with the asparagus.
4 To check if the asparagus is cooked, use the tip of a knife which should sink into the base of the asparagus.
5 Drain them on absorbent paper and empty the zests into a bowl, add the grapefruit juice warmed to 8cl (0.3 cup) of olive oil, salt, pepper and fresh herbs.
6 Place your 3 asparagus on each plate and pour to taste the warm sauce with the zests. You will then have a pleasant taste surprise by enjoying the mixed flavors of grapefruit and asparagus.
A chef's advice
This white asparagus with grapefruit zest embodies contemporary French culinary spirit: a respectful alliance between regional tradition and creativity. Landaise white asparagus, protected by its IGP designation, appears only a few weeks per year, between March and May, making it quintessentially a springtime delicacy. You'll appreciate it as an appetizer at special meals or seasonal lunches, when the first asparagus appears. Pink grapefruit, with its measured acidity and citrus notes, dialogues subtly with the gentle minerality of asparagus. This preparation pairs beautifully with a dry Loire white or a light Alsatian wine. You can serve it in a gastronomic context or as an elevated everyday meal: it stands alone as an appetizer or pairs perfectly before delicate poultry or white fish. Its light character also makes it an excellent opening to a springtime meal.
Frequently asked questions
Can we substitute pink grapefruit with another citrus fruit?
Yes, choose white grapefruit for comparable acidity or fresh lemon for more vibrancy. Avoid orange as it lacks freshness. Adjust the juice quantity based on your chosen fruit to balance the sauce.
How do we ensure perfectly cooked white asparagus?
Test with a sharp knife tip at the asparagus base: it should penetrate without resistance. Avoid overcrowding the water, which slows cooking. Allow 12 to 15 minutes depending on thickness. The cloth placed on top maintains heat and ensures even cooking.
Why use a tea infuser for the zests?
A tea infuser allows you to cook the zests with the asparagus while retrieving them easily. It prevents them from dispersing in the water and ensures clean extraction. You can also use a small muslin cloth tied with string.
