  • 8 raw shrimp tails, peeled (small vein removed)
  • 1.75 oz (50 g) of bacon, cut into very small pieces
  • 0.4 cup (10 cl) of 30% liquid cream
  • 2 egg yolks
  • 1 touch of wasabi (optional but excellent) or a pinch of Espelette chili powder
  • fine salt
  • olive oil
