Beer batter for fritters, that's the thing that changes everything. Light, airy, it coats apple slices without crushing them. Calvados is optional but really recommended for the adults.
Ingredients for 6 servings
History
- At the beginning there was a feast day among the Romans for the "Calends of March" which represented for them the end of winter.
- So for the occasion slaves could prepare "Chuccuera" as they wished, the ancestors of our fritters.
- Then the Christian religion took up this practice and indicated that this day (Mardi Gras) would be the day before the beginning of Lent, that is to say 47 days before Easter.
- 8.75 oz (250 g) type 55 flour
- 1 pinch of fine salt
- 2.5 dl of good blonde beer or 1.1 cups (25 cl) of whole milk + 0.4 oz (12 g) of yeast
- 3 eggs (3 yolks and 3 whites)
- 1 dash of grapeseed oil (or rapeseed oil)
For the filling:
- 2.2 lb (1 kg) of apples (Reine de Reinette for example)
- 1.7 fl oz (5 cl) of Calvados (unless you're making them for children but it's really good otherwise)
- 2.1 oz (60 g) of caster sugar
- Icing sugar
- Grapeseed oil for frying (if possible)
