Ingredients for 8 servings
- 3 bananas
- 3 eggs
- 50 grams of butter
- 125 grams of sugar
- 120 grams of flour
- 30 grams of cornstarch
- 1 packet of baking powder
- 1 packet of vanilla sugar
- 1 tablespoon of rum
- ½ lemon
1 Preheat your oven to 180°C.
2 Peel the bananas and reduce them to a puree.
3 Squeeze half a lemon and pour the juice over the banana puree.
4 Mash the soft butter with a fork and incorporate it into the banana puree. Set aside.
5 In a bowl, whisk the whole eggs with the sugar until you get a fluffy mixture. Add the island vanilla sugar, flour, cornstarch and baking powder. Mix well to obtain a homogeneous batter.
6 Then add the banana puree and pour the equivalent of 1 tablespoon of rum. Mix vigorously.
7 Oil a cake mold or put a sheet of parchment paper then pour the batter into it.
8 Bake for approximately 25 minutes at 180°C. Let cool before unmolding.
