1 Preheat the oven to 375°F (190 °C) (gas mark 6/7). Butter a baking dish approximately 27 cm in diameter, then dust it with vanilla sugar. Split the vanilla pod and scrape out the tiny seeds.
2 Mix the vanilla seeds with the sugar, flour, salt, crème fraîche, milk, star anise ground into powder, lightly beaten eggs and calvados for 2 minutes.
3 Peel and cut the apples into quarters, then arrange them in a spiral in the baking dish. Pour the egg mixture over them. Bake for 40 minutes, then serve warm.
A lovely recipe. The addition of calvados is not essential if you want to enjoy the anise flavours even more.
