Recipe: Stuffed Cornish Hen with Strawberries and Curry Sauce
Step-by-step directions
1 Wash, hull the strawberries and cut them in half.
2 Stuff the Cornish hen with thyme and strawberries.
3 Salt and pepper the Cornish hen
4 Cooking: Melt a good piece of butter in a Dutch oven (without browning it!)
5 Brown the Cornish hen on all sides (without browning the butter!)
When done, place it on a plate
6 Lower the heat then add the heavy cream to the Dutch oven and the curry.
7 Mix everything well until the cream is liquid. Return the Cornish hen and cover the Dutch oven
Let simmer for 1 hour
8 Turn the Cornish hen every 15 minutes.
