Ingredients
For half a liter of redcurrant coulis:
17.75 oz (500 g) redcurrants
7 oz (200 g) sugar mixed with one packet of vanilla sugar
Step-by-step directions
1 Wash your redcurrants thoroughly and remove only the fruit.
2 Blend the redcurrants and sugar together in a blender.
3 Pour into a saucepan and cook over low heat for 20 minutes.
4 Blend again quickly for 20 seconds.
5 Pass the coulis through a chinois (fine-mesh strainer) to remove all the seeds.
6 Heat again to 210°F (100 °C) for 5 minutes and pour your coulis into your sterilized jars.
7 Seal each jar hermetically and turn them upside down until they cool completely.
Chef Patrick's Comment
A simple recipe, you can add a little grenadine to it. Once the jars are turned upside down, plunge them into cold water.
