Floating island is a classic from the 1950s that you still find in good bistros. Egg whites beaten stiff, poached in simmering water, then coated with raspberry coulis. Here we make the coulis ourselves with frozen raspberries. Allow 20 minutes of preparation, plus one hour in the refrigerator.
