1 Wash and dry the zucchini.
2 Slice them into not-too-thin rounds.
3 Peel and slice the onions and garlic cloves.
4 In a sauté pan, heat the oil without letting it smoke.
5 Brown the zucchini and onions over high heat, stirring for a few minutes, then lower the heat.
6 Add 1/2 cup of water, the garlic, and fennel seeds.
7 Season with salt and pepper.
8 Cook over low heat for 20 minutes. Serve hot, sprinkled with flat parsley or with sliced poultry. The anise flavor pairs very nicely with the zucchini.
Good recipe. You don't necessarily need to add water and cook for 20 minutes since, after sautéing, your zucchini slices are already cooked. You just need to cover the pan and the moisture will do the rest.
