with Turmeric and Lomo tongue strips
  • Cream of coral lentils with scallops and frogs for 4 people:
  • 300 g (10.5 oz) of organic coral lentils washed and dried
  • 8 fresh scallops shelled and cut into 24 dice
  • 8 fresh frogs from Dombes (if possible)
  • prepared fish stock
  • 30 cl (1.25 cups) of 30% liquid cream
  • 20 cl (0.8 cup) of Noilly-Prat (or vermouth)
  • 1 large tablespoon of turmeric (Madagascar if possible)
  • 1 shallot, minced
  • 1 knob of butter
  • 50 g (1.75 oz) of Lomo or dried beef cut into small strips and pan-fried
  • lemon thyme (if you have it)
  • salt and freshly ground pepper
