Licorice Sponge Cake:Ingredients:
  • 2 rolls of round black licorice
Pastry Cream 2 tbsp
  • 2 tbsp of cream
  • 2 eggs
  • 60 g (2.1 oz) of sugar
  • 60 g (2.1 oz) (flour and cornstarch).
Hibiscus Flower Syrup:Ingredients:¼ l of water
  • 150 gr (5.25 oz) of sugar
  • 50 g (1.75 oz) of hibiscus flowers
(Hibiscus flowers for decoration)Ingredients:
  • 100 ml (0.4 cup) of cream
  • 20 g (0.7 oz) of powdered sugar
  • 100 grams of mascarpone.
  • 25 ml (0.8 fl oz) of hibiscus syrup.
  • 1 sheet of gelatin (for me powdered agar-agar).
Mint Bavarian Cream (fresh mint)Ingredients:½ bunch of fresh mint
  • 1 egg yolk
  • 2 Gelatin (or agar-agar or powder).
½ tbsp cornstarch
  • 15 cl (0.6 cup) of milk
  • 50 g (1.75 oz) of sugar
  • 100 gr (3.5 oz). cold fresh cream
Green food coloring
  • 1 tbsp of mint syrup. (Optional).
Licorice Coulis or Mousse:Ingredients:
  • 300 ml (1.25 cups) of milk
  • 150 g (5.25 oz) of liquid cream
  • 50 grams of licorice
  • 10 g (0.4 oz) of sugar
