Licorice Sponge Cake:Ingredients:
  • 2 rolls of round black licorice
Pastry Cream 2 tbsp
  • 2 tbsp of cream
  • 2 eggs
  • 2.1 oz (60 g) of sugar
  • 2.1 oz (60 g) (flour and cornstarch).
Hibiscus Flower Syrup:Ingredients:¼ l of water
  • 5.25 oz (150 gr) of sugar
  • 1.75 oz (50 g) of hibiscus flowers
(Hibiscus flowers for decoration)Ingredients:
  • 0.4 cup (100 ml) of cream
  • 0.7 oz (20 g) of powdered sugar
  • 100 grams of mascarpone.
  • 0.8 fl oz (25 ml) of hibiscus syrup.
  • 1 sheet of gelatin (for me powdered agar-agar).
Mint Bavarian Cream (fresh mint)Ingredients:½ bunch of fresh mint
  • 1 egg yolk
  • 2 Gelatin (or agar-agar or powder).
½ tbsp cornstarch
  • 0.6 cup (15 cl) of milk
  • 1.75 oz (50 g) of sugar
  • 3.5 oz (100 gr). cold fresh cream
Green food coloring
  • 1 tbsp of mint syrup. (Optional).
Licorice Coulis or Mousse:Ingredients:
  • 1.25 cups (300 ml) of milk
  • 5.25 oz (150 g) of liquid cream
  • 50 grams of licorice
  • 0.4 oz (10 g) of sugar
Crispy Licorice:Ingredients:Black round licorice rollsHot oil
