An almond pastry custard takes 35 minutes, starting at 200°C then down to 160°C. The trick is keeping that all-butter puff pastry crispy underneath. Mix the custard with organic almond powder, and the whole game shifts.
Ingredients for 6 servings
- 3 cups (70 cl) whole milk
- 1.25 cups (30 cl) liquid cream (30%)
- 3 organic eggs (2 whole and 1 yolk)
- 4.25 oz (120 g) caster sugar
- 3.2 oz (90 g) cornstarch (Cornstarch)
- 1.75 oz (50 g) organic almond powder
- vanilla extract
- 1 circle of "pure butter" puff pastry approximately 26 to 30 cm.
