12 beautiful prawns with tails peeled but still attached
2 blood oranges with slices peeled to the flesh and juice reserved
1 sweet potato cut into large chunks
1 plantain banana peeled and cut the same way
a little fresh ginger cut into small pieces
1 splash of Mandarine Napoléon*
salted butter, olive oil and freshly ground pepper
Step-by-step directions
1 In a saucepan pour the pieces of sweet potato and plantain banana, cover with water, salt and add the ginger dice, cook for approximately 15 minutes, mash then correct the seasoning and add a good knob of salted butter.
2 In a pan pour olive oil, when hot roast your salted and peppered prawns 2 minutes on each side then remove them.
3 Remove a little oil then put back on the heat, deglaze with Mandarine Napoléon then add the orange juice, season then place your prawns in this juice, just bring to a boil then stop and cover. Finishing: In the center of each warm plate spread your sweet puree and place your prawns on top with a few slices of blood orange and a little juice around. *Of course you will omit this alcohol if there are children at the table.
