Ingredients for 6 servings
- 2 kg of small herrings or 1 kg of fillets of large herrings
- 2 beautiful onions peeled and sliced
- 2 large carrots peeled and sliced
- 4 cloves crushed with 6 peppercorns, fine salt, 1 bay leaf and a little thyme flowers
- 1/2 bottle (37.5 cl) of dry white wine (Gros Plant for example)
- 10 cl of alcohol vinegar
