Here is my recipe for marinated herrings. To preserve them in jars, it will be more complicated (because of the somewhat technical equipment: sealing machine, etc.)
The marinating happens in two stages: cold salting overnight, then oven cooking with white wine and vinegar. Budget 24 hours total before serving. It keeps well and tastes even better over the following days.Ingredients for 6 servings
Marinated herrings for 6 people:
- 4.4 lb (2 kg) of small herrings or 2.2 lb (1 kg) of fillets of large herrings
- 2 beautiful onions peeled and sliced
- 2 large carrots peeled and sliced
- 4 cloves crushed with 6 peppercorns, fine salt, 1 bay leaf and a little thyme flowers
- 1/2 bottle (1.6 cups (37.5 cl)) of dry white wine (Gros Plant for example)
- 0.4 cup (10 cl) of alcohol vinegar
