Step-by-step directions
Melt the butter
add the carrot and leek
add the white wine until reduced
add the oyster water
reduce by half
add the cream + herbs of Provence
let cook 5 minutes
poach the oysters for 2 minutes
remove from heat and return to shell.

Hello, my two cents on this recipe, first only use the white part of the leek to sweat with butter half salt, do not add the oyster water (too salty when reducing) cook the oysters 30 seconds maximum and definitely no herbs of Provence which taint the marine flavor of the oysters.
