Floating island is whites beaten and baked in the oven that float in vanilla cream. It just takes beating your whites properly and respecting the 35 minutes of cooking in a water bath. A restaurant dessert, nothing complicated, but it does require a bit of precision.
Ingredients for 6 servings
- 2.1 cups (500 ml) vanilla custard cream
- 5 egg whites
- 2.8 oz (80 g) caster sugar
- 1 sachet vanilla sugar
- A pinch of salt
- 1.75 oz (50 g) caster sugar
- 3 tablespoons water
