Ingredients for 4 servings
- As usual it only has value if prepared with good quality products.
- You will notice that now we make the spinach "fall" raw whereas before we cooked it in water.
- To add my personal touch, a few sorrel leaves added to increase its smoothness.
- Bone-in ham Chablis style, spinach and sorrel cream. For 4 people:
- 4 beautiful slices of farmhouse ham cut at the bone.
- 300 g of fresh spinach leaves, washed 3 times and lightly crushed.
- A few sorrel leaves chopped.
- 1 shallot chopped.
- 8 cl of Chablis.
- 15 cl of liquid cream minimum 30%.
- Salt, freshly ground pepper and nutmeg zest
