Today, I offer you a simple recipe that everyone loves. As always, it's only worth making if you use good ingredients. You'll notice that now we use raw spinach, whereas before we would cook it in water. To add my personal touch, I add a few sorrel leaves to enhance the flavor.

  • 4 beautiful slices of farm ham cut on the bone
  • 10.5 oz (300 g) fresh spinach leaves, washed 3 times and lightly crushed
  • A few sorrel leaves, chopped
  • 1 shallot, chopped
  • 0.3 cup (8 cl) Chablis wine
  • 0.6 cup (15 cl) heavy cream, at least 30% fat
  • Salt, freshly ground pepper and nutmeg
